I am a 33 yr. old mother of four - whatever it is...for the most part, I CAN RELATE. There are SO many diets out there - pills, FDA approved this, counting points that, 30 day destroy, shred, P90-180...enough!

What doesn't sell is the best solution. I have ideas and recipes I am not compiling for a book or to sell, but that I use every day and want to share with those in the same boat. I'm talking stuff from Walmart, quick and easy, healthy, ready to freeze, etc. I'll take the time to add pics and calorie/nutrition info which will help me as well! : ) Thanks for stopping by and share your ideas, please!

New Fav Discovery

Okay, since I did this post for about ten minutes and went to save it and it was gone, excuse my curt and to the point explanation : )  I am though, loving this meal lately for me and the kids.

First, is Annie's Homegrown organic shells and white cheddar.  It's more expensive than Kraft (and don't we love those little boxes of Kraft mac-n-cheese?  But they leave us feeling icky about ourselves) about $1.37 a box, but TRUST me, it's worth the few pennies and YOU are worth it.  It has 6 all natural ingredients, its super fast, and one serving (1 cup) has 280 cal., 10 g. protein, 2 g. sugar and of course the nutrients.

Second is Greek style yogurt.  It ROCKS.  Like sour cream?  You like plain Greek style yogurt.  It great in black bean soup, cucumber sauce for gyros/dipping, add honey and walnuts and fruit to it, etc.  For the container shown it's 80 calories, 15 g. protein, 160 ml. potassium, and 6g sugar, and of course all the bennies of yogurt.

All you need after that is skim milk and fresh spinach.  Make shells and set aside, add about 1/4 c. yogurt, few splashes of milk, cheese packet (if you want a richer mouth feel and you can afford the calories that day, add a T. or so of butter), and 1/4-1/2 c. chopped spinach (finely chopped for kids) - whisk until creamy and spinach is wilted, add back your hot shells and there you go.  Fast, cheap, healthy and REALISTIC!!  ; )

Possibilities are endless as a side dish or main dish.  Add bacon bits, chopped broccoli, sun-dried tomatoes, fresh tomatoes, parm, the list goes on.  Hope you get to try it out!
